Tamarind

1 cup tamarind paste
Serves 7 persons
Place the paste in a pot with 2 cups of water. Heat and bring to the boil.
Remove from the heat and set aside.
When cool squeeze the paste with your hands then place in a gauze sac with its juice and tie well.
Add 6 cups of water. After an hour squeeze the sac well and remove.
Stir in 3/4 cup of sugar or to taste.
Serve cold.
