Fish

Ingredients:

1/5 lbs. bass (loukkoz)
7 oz. garlic
10 oz. onions (chopped very fine)
1 tbs. cumin
1 1/2 tsp. salt
1 tsp. red pepper
7 oz. lemon juice
1 pts. oil
1 bunch coriander finely cut
Method:
Clean
fish. Cut it into pieces each about an inch thick. Salt
and allow it to soak in the salt for 30 minutes. Fry it
in oil. Take off the accessories of the fish and put them
in 2 pts. of water and let them boil for 30 minutes. Fry
onions, garlic, and coriander in oil and when fried put
in strainer to drain out the oil. Put in a pot and strain
over in the broth from the fish accessories. Add salt and
cumin and place on top the fish pieces and boil another
30 minutes. Add lemon juice and spices, sprinkling it over
the whole. Serve cold.
