Potatoes with garlic and coriander
Botata bi kouzbara

The flavor of the coriander lifts the simple potato to another culinary plateau.

500 grams potatoes
3 cloves garlic, crushed
1 cup coriander, chopped
1 cup olive oil
Fresh lemon juice
Salt and pepper


Peel the potatoes and cut into 1-inch cubes, then fry in olive oil until golden brown.

Remove the cubes from the frying pan, and drain on paper towel. Add the chopped coriander and crushed garlic to the same oil and sauté until limp.

In a large bowl, combine the potatoes with the coriander mixture and squeeze about 1/2 cup of fresh lemon juice over the dish immediately before serving.

Serves 2 to 4
