Lamb Spinal Marrow

250 g lamb spinal marrow
1/2 teaspoon salt
Juice of one lemon
2 tablespoons olive oil
Serves 3 persons
Rinse the lamb spinal marrow and place it in a bowl with water to cover. Add salt.
Cook over medium heat for 10 minutes.
Drain the spinal marrow and let cool.
Cut into 2 cm pieces, place in a serving dish and pour a mixture of the lemon juice and oil on the marrow pieces.
Serve cold.
