Fried Lamb's Liver

Makes: 1 mezza dish
Cooking time: 15 - 20 minutes
1 lamb’s fry /
liver
½ cup olive or nut oil
salt and pepper
juice of 1 lemon
1 tablespoon chopped parsley to garnish
Cut the lamb’s fry into 1 in (2.5 cm) strips,
discarding the gristle. Fry in hot oil to brown the
outside and lightly cook inside. Chop into cubes and
serve warm or cold sprinkled with lemon juice and
garnished with parsley. |
