Fava
beans in lemon juice, garlic and olive oil
Foul modammas
A simple, sustaining
dish, frequently eaten at breakfast.
1 cup fava beans, cooked
2 cloves garlic, crushed
2 tablespoons lemon juice
2 tablespoons olive oil
Salt
Wash the dried fava beans and leave to soak in at least
3 cups of water for 12 hours.
After soaking, rinse the beans and place in a saucepan with
at least 5 cups of water and cook for about an hour, or
until tender. Drain and place in a mixing bowl. Lightly
mash the beans, adding the crushed garlic and lemon juice.
Spoon the mixture into a small bowl.
Pour olive oil over the beans and serve warm or at room
temperature with Arabic bread.
