Fava Bean Stew
Yakhnet Fool

1 Ib. fresh fava beans
1 Ib. mawzat [lamb pieces]
5 cloves garlic
1 ½ c fresh cut coriander
3 T ghee
Salt and pepper to taste
3 to 4 c hot water

1. Wash, remove ends and cut into 2 inch pieces and drain. Set aside.

2. Fry meat in ghee. Add mashed garlic. Season, then add fresh cut coriander, cover with hot water, cover the saucepan, and cook until done. About an hour. If you use a pressure cooker the stew will cook in ½ hour.

3. Then, add cut pieces of fava beans and cook until beans are tender. Serve with rice. Some people like to also serve yogurt.
